Vegan Sausage Rolls.

A quick post to confess my utmost love and affection for these vegan sausage rolls.


The only thing I altered was using cashews instead of pecans (due to shockingly extortionate price of pecans!), also using half onion half leek instead of a whole onion (due to lack of whole onion in household - honestly, who leaves a half?) and then i also sprinkled salt along with the sesame seeds at the end, as i'm trying every way possible to up my blood pressure from out of almost-dead-zone!


Vegan sausage rolls
125g cashews
stale bread to make ~1/2 cup breadcrumbs
1/2 an onion

1/2 a leek
300g silken tofu
1 cup rolled oats
1 Massel beef-style stock cube
1 teaspoon garlic powder
3 tablespoons soy sauce (you can use less - the end result will be less salty and brown, and therefore less resemble a 'real' sausage roll)
ground pepper, to taste
3-4 frozen puff pastry sheets
water or vegan milk for brushing pastry
sesame seeds.



Blitz all ingredients together in a food processor and roll in puff pastry. Top with sesame seeds and bake in 200C oven for 20 minutes!
